Is there a way to get a summary of overall email stats (e.g. open rate, click rate, opens by email client) as opposed to just pulling in all of the raw data?
That's not directly possible via the API since that would be reproducing the exact figure accessible in app. You can use the Email Events API to get certain high-level stats for specific sends, like delivered/opened:
