Do you have any idea how to create a page with user list divided by category, and the possibility to add custom fields to users and have Blog they've written ?

You could potentially use HubDB to create that larger author page, or use a bit of HubL similar to what Derek does here: HubL: (Goal) Add Co-Authors in Blog Post on a page hosted on your blog domain. However, this type of author overview page functionality does not exist yet natively in the CMS for the blog.
